If you have nothing fresh to eat at home except a can of chickpeas (garbanzo beans) try this So easy to make. Chickpeas or Garbanzo beans are high in protein according to Wikipedia and manganese. We had a whole bunch of spinach so dumped that it in to get our fill of greens and Vitamin K, C and iron.

This chickpea recipe is lightly based on the Indian Chana Masala. But the Indian recipe is too spicy and heavy. We wanted to create a Euro centric chickpea recipe with hints of the east.

The infusion of Ceylon Cinnamon with its mild taste with hints of citrus and cloves and chopped tomato creates a lovely savory flavor. The spices are not overdone but add complex undertones and a hint of smoky flavor with the Cardamom pods. We didn't have fresh curry leaves and used curry leaf powder and it was still pretty good. And finally coconut milk which creates the creamy gravy that is so perfect with some fresh white rice. No need to for meat because chick peas

Prep Time : 10 minutes
Cook Time : 58 minutes
Serves : 4 people



1-2 small dried red chili
1 green chili slit


  1. Heat the oil on medium heat for 5 minutes
  2. Add the black mustard seeds and sauté for 3 minutes
  3. Add the onions and 1 tsp salt and let it brown for 5 minutes
  4. Add the rest of the ingredients and sauté for 5 minutes
  5. Add the Garbanzo beans and chopped tomatoes and let simmer on medium heat for 25 minutes
  6. Add the Spinach and let it cook for 5 minutes. Add more salt if necessary.
  7. Add the coconut milk and let it simmer for another 5 minutes

Unlike ordinary Cassia Cinnamon you find in the stores, Ceylon Cinnamon has low Coumarin levels, so it won't damage your liver, especially if you are a regular Cinnamon tea drinker. Besides Ceylon Cinnamon is mild, yet slightly sweeter. its not spicy like store bought Cassia Cinnamon, but has hints of cloves and citrus with wonderful subtle aroma. Ceylon Cinnamon is subtle and adds to create a more complex flavors. You would never know there is Ceylon Cinnamon in this dish, unlike Cassia Cinnamon which tends to be harsh and immediately makes its presence felt and often ruins the recipe.
