A delectable a Sri Lankan Roti recipe with coconut, Ceylon cinnamon powder and flour. A delicious easy to make healthy meal. This is a nice Saturday or Sunday Brunch meal especially when served with a nice beef curry with plenty of gravy and a side dish of a cucumber salad. So unusual, refreshing and healthy.

INGREDIENTS




  1. Add flour, grated coconut, cinnamon and oil in a large mixing bowl and mix by hand. Add 1/3 cup of water in stages as you mix. It will get sticky which is why you add the water in stages.

  2. After mixing thoroughly, make about ten equal sized balls.

  3. Set aside for about 15-30 minutes. Leaving it to rest for 15-30 minutes makes the balls less sticky for flattening into Roti's.

  4. After 15-30 minutes flatten the balls into 4 inch diameter and 1/4 inch thick disc shapes or Roti as they are called. You can use hands or a lightly oiled spatula. You can use round cutter to make it perfectly round if you wish.

  5. Heat a pan on medium heat after lightly greasing pan with 1/2 tsp. of vegetable oil of your choice. Or use a Oil sprayer.

  6. Once heated add 3-4 Roti's and pan roast each side for 12 minutes. They should have slight burn marks which is an indicator the flour is not raw and is well cooked.

  7. Serve Roti with a Beef Curry, Irish stew or similar dish with lots of gravy (so you can dip the Roti in it) and some vegetables. We used sliced cumbers and tomatoes marinated with salt, pepper and lime juice as a vegetable which is delicious and a nice offset for the Roti and beef curry.

WHY CEYLON CINNAMON



Unlike ordinary Cassia Cinnamon you find in the stores, Ceylon Cinnamon has low Coumarin levels, so it won't damage your liver, especially if you are a regular Cinnamon tea drinker. Besides Ceylon Cinnamon is mild, yet slightly sweeter. It's not spicy like store bought Cassia Cinnamon, but has hints of cloves and citrus with wonderful subtle aroma.

Ceylon Cinnamon is subtle and adds to create a more complex flavors. You would never know there is Ceylon Cinnamon in this dish, unlike Cassia Cinnamon which tends to be harsh and immediately makes its presence felt and often ruins the recipe.
