Try this keto diet friendly Cinnamon fried fish with a tasty mix of vegetables stir fried in coconut oil and sesame oil. We used King Mackerel which is a really tasty fish with virtually no bones. Mackerel is an oily fish, that is rich in omega-3 fatty acids. The best part is you can eat it as a healthy snack instead of reaching for potato chips or a cup cake.

You can can get King Mackerel at some Chinese fish stores or check with your local fish monger. Ceylon Cinnamon work very well with this fish to add taste and get rid of any fishy smell. If they don't have King Mackerel, ask the fish store to recommend something similar.

We paired it with some lovely vegetables stir fried in coconut oil which is really great for weight loss. Adding some Sesame oil to stir fry the vegetables really makes veggies come alive. Pair it with some white rice if you are not on the Keto diet. Otherwise go heavy on the vegetable and avoid the rice. The crunchiness of the fish and cashew will keep you happy without the rice.

DIRECTIONS



  1. Cut the fish into 1.5 inch cubes. This allows the Cinnamon mixture to coat much of the fish surface and adds to the sublime taste.

  2. Mix Ceylon Cinnamon powder, Hungarian Paprika, black pepper and salt in a small spice dish. Do not worry about the amount of salt. You need it and some of will wash away to the pan.

  3. Sprinkle and rub the spice mixture onto all sides of the fish.

  4. Heat 5 tablespoons of coconut oil in a pan. About 5 minutes.

  5. Add the fish and fry turning frequently. The coconut oil and cinnamon browns the fish. The outer layer should be hard which then adds a nice crunch. The inside layer will be soft yet firm like chicken. About 12 minutes on medium high heat. If you wish you can fry it on medium heat it will take longer. About 20 minutes.

  6. Remove the fish with tongs leaving the balance oil behind.

  7. Add the cashew nuts and onions and saute for 2 minutes on medium heat. Then add the bell pepper and cook for another 3 minutes stirring frequently. Finally add the swiss chard and 2 tsp. sesame oil and stir fry for another 3 minutes. Add a tablespoon of coconut oil and a pinch of extra salt if needed.

    You can add more vegetables, especially mushrooms if you wish. Extra vegetables are always good for people on the keto diet with no carbs.

  8. Plate it with the fish and serve.

WHY CEYLON CINNAMON


Unlike ordinary Cassia Cinnamon you find in the stores, Ceylon Cinnamon has low Coumarin levels, so it won't damage your liver, especially if you are a regular Cinnamon tea drinker. Besides Ceylon Cinnamon is mild, yet slightly sweeter. It is not spicy like store bought Cassia Cinnamon, but has hints of cloves and citrus with wonderful subtle aroma.

Ceylon Cinnamon is subtle and adds to create a more complex flavors. You would never know there is Ceylon Cinnamon in this dish, unlike Cassia Cinnamon which tends to be harsh and immediately makes its presence felt and often ruins the recipe.
