Something original and creative to wake you up from the stupor of regular meals.
For the sauce:
Making the Meat Balls
Mix minced lamb, chopped onions, chili, cilantro, spices and salt in a mixing bowl. Make sure the onions are finely chopped, otherwise the it is hard to mix it into the meat balls. Finally add the egg and mix it well. Cover and leave to marinate in the refrigerator for at least an hour.
Take out and shape into balls when you are ready to cook. The best way to shape the meat balls is to scoop it with a measuring tablespoon. Preheat a frying pan with coconut oil. Place the meal balls in the frying pan and fry, turning frequently., until browned on all sides.
Making the Tomato Sauce
Heat 1 tbs. of Coconut in a large pan and cook the garlic on a low heat for 5 minutes. Add the chopped tomatoes, 1/2 tsp Ceylon Cinnamon powder, 1 tbs Tomato puree, pepper and red chili flakes, and cook for five minutes and then sauté for 15 minutes on medium low heat until the sauce has thickened.
Unlike ordinary Cassia Cinnamon you find in the stores, Ceylon Cinnamon has low Coumarin levels, so it won't damage your liver, especially if you are a regular Cinnamon tea drinker. Besides Ceylon Cinnamon is mild, yet slightly sweeter. It is not spicy like store bought Cassia Cinnamon, but has hints of cloves and citrus with wonderful subtle aroma.
Ceylon Cinnamon is subtle and adds to create a more complex flavors. You would never know there is Ceylon Cinnamon in this dish, unlike Cassia Cinnamon which tends to be harsh and immediately makes its presence felt and often ruins the recipe.
